Couldn’t get the smoker over in time so we roasted. Hit 170 internal WAY faster than I was expecting for a 14.5lb bird. Gonna turn it down to 180ish and baste / inject every 15-20 until 5:30.
By the way for those asking about the fried deviled eggs, we got all the way to making the filling and my wife subconsciously went ahead and filled all of the eggs up with the filling and topped them out of habit before realizing we hadn’t fried them yet. Instead of wiping it all out and frying the egg whites we just decided to leave it lol.
But for future instance, all you do is once you have the eggs gutted you egg and batter the egg white just like you would any other fried item. Throw em in some oil, when they come out let them cool and then throw in the filling and top however you want.
Regular deviled eggs as a Plan B is a pretty darn nice Plan B I’d like to be saddled with. I could make a meal off of those.
My buddy made 72 for 17 people.
We’ll be out of town much of next week but rest assured you now pushed me to make a batch when we return. Didn’t take much of a push either.
